Mash Bill: Bob's Red Mill organic dark rye and extra special bitter barley malt, barley, and wheat.

Barrel Type: A & K Cooperage from Missouri, heavy toast for almost 4 years, then moved to a heavy char barrel for one year.

This is a single  barrel whiskey made from primarily rye- 64%, and 36% Andy Garrison’s blend of Extra Special barley malt, barley and wheat. The rye and barley provide bready, spicy flavors while the wheat and Extra Special malt provide sweetness and confectionery notes like honey and graham crackers.  Aged in barrel for 58 months, first in an A & K Cooperage from Missouri heavy toast for almost 4 years, then moved to a heavy charred barrel for one year.

This is our oldest whiskey to date, we had been saving it for a special occasion and thought it would be a perfect fit for the holidays! The aroma is redolent with cinnamon, nutmeg and vanilla, and the palate is similarly aligned with loads of baked goods and wintery spices. A soft, easy-going whiskey which would be perfectly at home in a highball before dinner or a hot toddy afterwards.
