The new whiskey is Barrel #45, a barrel of Oregon straight bourbon put down in April 20, 2015. This makes it 3 and 3/4 years in a charred oak barrel from A & K Cooperage in Higbee, Missouri.
Its got everything you might like in a bourbon, depth, sweetness, a touch of spice from the rye, a lingering finish, wonderful barrel notes.
We chose all organic, all PNW-grown grains for this one.
- The corn (61%) was grown in Milton-Freewater, and fresh-milled at Fairhaven Organic Flour Mill
- The wheat (27%) was a soft white club wheat and the rye (13%) was a northern dark variety. Both the wheat & rye were grown in the Willamette Valley at Hunton’s Farm near Junction City.
