Available in a filtered and unfiltered version. Once this barrel was emptied, it was refilled with Pinot Noir fortified wine for some additional maturation.

Single pass distillation gave this whiskey big, bold flavor. Originally 36 bottles were produced, but during filtration we had an equipment malfunction and ruined seven bottles' worth. Tragedy!

Our first Spelt whiskey release. Spelt has a wonderful warmth with a bright, long-lasting flavor reminiscent of an Irish whiskey.
