Just in time for Summer, we are releasing a new single-barrel Straight Bourbon, Barrel #70! This is the oldest Bourbon we’ve released, and was aged over 5 years (63 months) in a new, medium-char Missouri oak barrel from The Oak Cooperage in Higbee, MO. The mash bill is all organic, locally-milled grain and composed of 53% corn, 36% wheat, and 11% rye. Compared to some previous Bourbon releases, the longer barrel aging and use of rye instead of malted barley gives this whiskey a drier, oak-led, more savory flavor with ample spice notes (think ginger molasses cookies and Johnny cakes with honey). The whiskey was slowly proofed from cask strength to 47% abv over 5 months to preserve the aromas and maintain a harmonious mouthfeel and bottled without chill-filtration. 94 proof.
